Antonio Matus

Antonio received his Hotel and Restaurant Management Degree in 1988 from El Colegio Nacional de Educacion Profesional Tecnica (CONALEP) in Veracruz, Mexico. Before opening Antonio’s in Taos, New Mexico in 2002, he worked for 17 years as a waiter, head waiter, cook, chef and restaurant manage in specialty restaurants, fine dining establishments, and high-volume chain outlets in Xalapa, Veracruz, and Cancun as well as Austin, Texas and Taos. He has worked extensively with Mexican regional, New Mexican, French and North American cuisines.

In 2002, he opened Antonio’s, the first of three successful restaurants, followed by Rellenos Cafe, and Sabor by Antonio in Taos, New Mexico. He demonstrated the skill and ability to conceptualize, plan, staff and open smoothly running restaurant operations. With each effort, word of mouth built a loyal following of local customers based on quality, integrity and continuous improvement. In a market largely dependent on tourism, Antonio’s reputation for top quality food, excellent service, comfortable atmosphere, and honest value spread among out of town guests.

In 2011 Antonio closed Sabor, sold Rellenos Cafe and focused on Antonio’s so he and Sarah could look for expansion to a larger, less cyclical market.

Sarah has also worked for over 17 years in restaurant service, hosting, front of house management, and restaurant styling.

Antonio’s Family

Sarah and Antonio form real partnership – planning and managing their businesses by relying on each other’ strengths, sharing the work load, and balancing it with family life and community involvement. They are brilliant restauranteurs whose minds are always on the welfare of customers and staff, the quality of Antonio’s, the improvement of their business, and the future.

Sarah and Antonio met in 1994 while working together at El Patio Restaurant in Taos and later married. Their son Marco Antonio is four years old.
